Carrot overload

I lost almost 2lbs overnight, but didn’t lost muscle mass, according to my fancy scales.  Losing that much when I’m not sick or fasting is just not normal in my life and leads me to believe I’m under-eating, but that’s not surprising because I’ve been full of vegetables since starting this diet.

I must say that I hadn’t appreciated the density of a carrot until the past 2 days.  Yesterday I ate about 8 snack-size carrots throughout the day and then I had a stomach-ache.  Today I started off with a carrot and apple smoothie, which took a lot of preparation because I’m normally a cereal chick, so preparing actual food in the morning was a bit of a struggle.  Anyway, I used a carrot that was probably larger than the recipe suggested.  As a result, the smoothie was about 1 1/2 pints and it took me the guts of an hour to get through it.  I’m not sure breakfast has ever left me feeling as full in all my life.

I then endured my husband and daughter eating just-baked croissants covered in butter during a family outing.  I was sorely tempted, but if I fail in week 1 then that’s just pathetic, so I abstained and essentially didn’t eat anything until this evening.  Carrot, apple, brazil nut and coconut milk is an extremely filling combo and so I didn’t feel the need to eat.

Dinner this evening was bison mince ragu with a bunch of veg, allowed spices and some more coconut milk.  It was really tasty, but left me so full that I couldn’t have a salad as well.

I honestly don’t know where I’d put any more food!
